Once the soaked cake has cooled completely, sprinkle the surface with shredded sweetened coconut, followed by Cool Whip, followed by more coconut.

Cut into SMALL pieces -- it is seriously rich.

Southern Coconut Cream Cake -- Part 1

Southern Coconut Cream Cake -- Part 1

This is part 1 of 2. This is the surface of the cake after the sauce, but before the topping and coconut goes on. Tomorrow's picture will be the finished cake.

Here's the recipe so far:

1) bake a white / yellow / butter cake in a 9x11 pan (I like the Trader Joe's vanilla cake (2 boxes)) according to the directions on the box.

2) AS SOON AS IT COMES OUT OF THE OVEN ... Using a blunt spoon handle, poke lots of holes in the top of the cake.

3) Mix together a can of sweetened, condensed milk (Eagle Brand or similar) with an equal amount of cream of coconut (the stuff used to make Pina Coladas, *not* coconut milk) and pour the mixture over the top of the holey, hot cake.

4) Let cool to room temp, then cover very loosely and let cool and rest overnight.

Flyball at the Mutt Strut

Flyball

There was an exhibition of Flyball at the Peninsula Humane Society annual "Mutt Strut" on Saturday.

PHS has not had to euthanize a healthy animal in over 6 years, and part of how they manage to keep that record is by the money they get from events like this.

Flyball is a dog training sport where the dogs run through this series of jumps, throw themselves against a block that allows them to snag a ball, then run back through those jumps. It is amazing to see these dogs FLY through the gates.

Sorry for the late post, I wasn't feeling all too good last night. Consider this to be the Sunday pic.

Joshua Norton (1818-1880) was a resident of San Francisco. On September 17, 1958, he published the following notice in the city's newspapers:

"At the peremptory request and desire of a large majority of the citizens of these United States, I, Joshua Norton, formerly of Algoa Bay, Cape of Good Hope, and now for the last 9 years and 10 months past of S. F., Cal., declare and proclaim myself Emperor of these U. S.; and in virtue of the authority thereby in me vested, do hereby order and direct the representatives of the different States of the Union to assemble in Musical Hall, of this city, on the 1st day of Feb. next, then and there to make such alterations in the existing laws of the Union as may ameliorate the evils under which the country is laboring, and thereby cause confidence to exist, both at home and abroad, in our stability and integrity.


NORTON I, Emperor of the United States"

As "Emperor", he was treated deferentially by the citizens of San Francisco. The currency he printed in his name was accepted by the merchants he frequented. He was said to have single-handedly stopped a pogrom against the poorer Chinese immigrants of the city by positioning himself in front of the mob, kneeling, and reciting the Lord's Prayer until the rioters dispersed themselves without further incident.

He issued "decrees" including declaring the use of the word "Frisco" describe the city to be an offense with a fine of $25.00 (an outrageous amount at that time), and requiring that a bridge be built connecting San Francisco and Oakland (the current position of the Bay Bridge).

His grave was moved when the City of San Francisco removed all gravesites in the city out to Colma, and he rests in Woodlawn Cemetery there, under the gravestone pictured above.

What you see above is a small area in a cross section of the cable that holds up the Golden Gate Bridge (aka "BOB" or "the Big Orange Bridge").
There are over 27,000 of the little (steel) wires wound together to make the big cable.
